To my surprise, Andrew's marinara does not have dried basil. He uses crushed tomatoes canned with basil, but doesn't add additional dried basil. Using a minimal number of ingredients, it is the perfect back up dish, along with a pot of pasta, to make when you need tried, true, and quick! The last time we made this for guests, as people were raving about the sauce, someone observed that is was "lucious!" and everyone at the table agreed.
1 large onion, finely chopped
crushed tomatoes with basil
salt to taste
red chili powder to taste, (less than ¼ teaspoon)
oregano to taste
thyme or fresh chopped rosemary, optional
Finely chop an onion or two. Add a small dab of oil to a sauce pan. When the oil is warm, add the onions. Let the onions soften with the salt and herbs. When the onions are caramelized, add tomatoes. Use with pasta, as the red sauce in lasagna, eggplant manicotti or pizza, or eat as a soup with some fresh homemade bread.
